The following makes a large amount of ground beef mix that can be frozen and 
then used in the recipes that follow.
Ground Beef Mix

 

4 medium onions, chopped

3 cloves garlic, minced

2 cups chopped celery

1 large bell pepper, chopped

1/4 cup vegetable oil

4 lbs ground beef

2, 14 oz bottles catsup

1, 15 oz can tomato sauce

1/4 cup worcestershire sauce

1 TBLSP salt

1 tsp pepper

In a large dutch oven, saute first 4 ingredients in hot oil until tender.  Add 
ground beef; cook until browned, stirring to crumble.  Drain off pan dripping.  
Stir in remaining ingredients.  Simmer uncovered for 20 minutes.  Cool.  Spoon 
mixture into 2 to 3 cup freezer containers.  Label and freeze.  Mix can be 
stored up to 3 months.  Yield 14 cups.  

Recipes:

 

Stroganoff

 

3 cups mix, thawed

1 can cream of mushroom soup

8 oz of sliced mushrooms

1/2 cup sour cream

Hot cooked noodles

Combine first 3 ingredients in a large skillet, bring to a boil.  Reduce heat 
and simmer 5 minutes.  Stir in sour cream.  Cook until heated through.  Serve 
over hot noodles.

Sloppy Joe

Spoon hot beef mix over hamburger buns.

 

Chili

 

2 cups thawed beef mix

kidney beans

chili powder

hot sauce

red pepper

 

Spaghetti Sauce

 

2 cups thawed beef mix

oregano

basil 

garlic powder

 

Stuffed Bell Peppers

 

2 cups thawed beef mix

2 cups cooked rice

grated cheese

 

Combine beef and rice, stuff prepared peppers, place in shallow dish, cover and 
bake at 375 for 25 minutes.  Sprinkle with cheese, bake uncovered for 5 minutes 
longer.

Tip;  Ground beef mix can be thawed/heated in crockpot
