Hi, Doug,
I'm not Marilyn, but I'll try and answer your questions.  There are eight fluid 
ounces in 1 cup.  I think eight ounces of elbow macaroni is about two cups.  
If you read through the directions in the recipe for "slow macaroni and 
cheese", you add two cups of the shredded cheese to the macaroni mixture and 
sprinkle the remaining cup on top.
