Orange Coconut Muffins 

 

Oranges and coconut offer both refreshing flavor and warm color. You'll be 
asked to make these again.

 

Prep: 20 min - Bake: 18 min

 

Muffins Ingredients:

 

1 1/2 cups all-purpose flour

1/4 cup sugar 

1 1/2 teaspoons baking powder

1/2 teaspoon baking soda 

1/2 teaspoon salt 

1/3 cup orange juice 

1/4 cup LAND O LAKES® Butter, melted

1 egg 

1 (11-ounce) can mandarin orange segments, drained 

 

Topping Ingredients:

 

1/3 cup flaked coconut 

1/4 cup sugar 

1 tablespoon LAND O LAKES® Butter, softened

1/2 teaspoon grated orange zest 

 

Heat oven to 375°F. Combine flour, 1/4 cup sugar, baking powder, baking soda 
and salt in large bowl. Combine orange juice, 1/4 cup melted butter and egg

in medium bowl. Add to flour mixture just until moistened. Gently stir in 
orange segments.

 

Spoon into greased or paper-lined muffin pan. Stir together coconut, 1/4 cup 
sugar, 1 tablespoon butter and orange zest in small bowl. Sprinkle evenly

over top of each muffin. Bake for 18 to 23 minutes or until lightly browned. 
Let stand 5 minutes; remove from pan.
