Strawberry Amaretto Cheesecake

 

Crust:

 

1 cup graham cracker crumbs

1/4 cup granulated sugar

2 tablespoons butter, softened

 

Filling:

 

4 (8 ounce) packages cream cheese, softened

1-1/2 cups granulated sugar

1 cup heavy or whipping cream

6 eggs

3 tablespoons lemon juice

1/2 teaspoon brandy or brandy extract

1 cup sour cream

1 tablespoon vanilla extract

2 tablespoons sifted all-purpose flour

1 cup chopped  fresh strawberries

 

Topping:

 

2-1/2 cups chopped fresh strawberries

1 cup amaretto liqueur

1 tablespoon granulated sugar

 

Method

 

1. Butter a springform pan.

2. To prepare the crust, put the crumbs, sugar, and Butter in a small mixing 
bowl and using a pastry blender or fork, thoroughly combine.

3. Press the mixture on to the bottom of the prepared pan.

4. Chill for 30 minutes.

5. Preheat the oven to 425 degrees.

6. To prepare the filling, put the cream cheese, sugar, and cream in a large 
bowl and beat with an electric mixer Until smooth.

7. Add the eggs, one at a time, beating after each addition, until the mixture 
is smooth.

8. Fold in the strawberries.

9. Pour the mixture into the chilled crust lined pan.

10. Bake for 15 minutes, then reduce the Temperature to 275 degrees and 
continue to bake for 1 Hour.

11. Remove from the oven and transfer to a wire rack and allow to cool for 3 
hours.

12. To prepare the topping, put the strawberries, amaretto, and sugar in a bowl 
and stir and toss to combine.

13. Spread the mixture evenly over the cooled cheesecake.
