Vegetables, at least many of them, do well in a crock pot.  Golden beets,
eggplant, carrots, onions, potatoes (all kinds), squash, peppers, (red,
green, yellow), mushrooms, sun chokes.  They release their juices and blend
together.  You need seasonings and some kind of liquid.  The liquid can be
vegetable broth, wine, beer, or just water.  I don't think tomatoes do well,
but they can be added toward the end if you like.
