Chicken Jambalaya

6 servings. Ideal crock pot size, 5 quarts

1 lb. boneless, skinless chicken breast, cubed

3 cups chicken broth fat free

3/4 cups water

1 ½ cups uncooked brown rice

¼ lb. reduced fat smoked turkey sausage, diced

½ cup celery stalks with leaves, thinly sliced

½ cup onion, chopped

½ cup green bell pepper, chopped

2 tsp. Cajun seasoning

2 garlic cloves, minced

1 bay leaf

1  14 ½ oz. can diced tomatoes, undrained



1. in large non-stick skillet, sauté chicken 2 to 3 minutes.

2. stir together remaining ingredients in crock pot

3. add sautéed chicken

4. cover; cook on high 6 hours

per serving 370 calories. 7 grams total fat



This is another one we love with a cold crisp salad.
