SESAME-CRUSTED CHICKEN Yield: 6 servings INGREDIENTS
- 1/2 cup all-purpose flour - 2 eggs, beaten - 1/2 cup Italian-seasoned bread crumbs - 1/4 cup sesame seeds - 2 teaspoons dried thyme - 1 teaspoon garlic powder - 1/2 teaspoon salt - 1/4 teaspoon black pepper - 6 boneless, skinless chicken breast halves (1-1/2 pounds total), pounded to 1/2-inch thickness - 2 tablespoons vegetable oil DIRECTIONS Place the flour in a shallow dish and the eggs in another shallow dish; in a third shallow dish, combine the bread crumbs, sesame seeds, thyme, garlic powder, salt, and pepper; mix well. Dip the chicken into the flour, then the eggs, then the bread crumb mixture, coating evenly with each. In a large skillet, heat the oil over medium heat. Saute the chicken in batches for 4 minutes per side, or until no pink remains.
