MOM'S CHICKEN CORDON BLEU

Yield: 6 servings
INGREDIENTS

-  2 slices (2 ounces) deli ham, coarsely chopped
-  1/2 cup (2 ounces) shredded Swiss cheese
-  6 boneless, skinless chicken breast halves
   (about 1-1/2 pounds total)
-  1/2 teaspoon salt
-  1/2 teaspoon black pepper
-  1 tablespoon Italian bread crumbs
-  1/8 teaspoon paprika

DIRECTIONS

Preheat the oven to 350 degrees F.
Coat a 6-cup muffin tin with nonstick cooking spray.

In a small bowl, combine the ham and
cheese; mix well and set aside.

Between 2 pieces of wax paper, gently pound the chicken with
a mallet or rolling pin to 1/4-inch thickness. Season the
chicken breasts with salt and pepper, then place equal
amounts of the ham and cheese mixture in the center of each
and roll up tightly, tucking in the sides as you roll.

Place the rolls seam side down in the cups of the
muffin tin. Sprinkle with bread crumbs and paprika.

Bake for 25 to 30 minutes, or until no pink remains in the
chicken and its juices run clear. Serve immediately.
