CREAMY SCALLOPED POTATOES for 2

2 tablespoons butter or margarine
2 tablespoons flour
1/2 teaspoon salt
1/8 teaspoon pepper
1 1/2 cup milk
2 large potatoes peeled and thinly sliced
2 tablespoons finely chopped onion

In a small sauce pan melt butter add flour and salt and pepper until smooth and

bubbly. gradually add milk bring to a boil stirring constantly. Remove from heat.

Grease a 1 quart casserole dish layer half of the potatoes layer the onions and

half of the sauce, top with remaining potatoes and sauce. Cover and bake at 350

degrees for 35 to 40 minutes.
