MONSTER MARSHMALLOW COOKIES Makes 4 dozen cookies. FOR THE COOKIES: 1 cup miniature marshmallows 1 cup milk chocolate chips 2 cups quick cooking oats 2 large eggs, room temp 1 cup sugar 1/2 tsp baking soda 2 cups flour 1 cup coarsely chopped pecans 1 1/4 cups crispy rice cereal 1 tbs vanilla 1 cup light brown sugar 2 sticks unsalted butter, softened 1 tsp baking powder FOR THE TOPPING: 1/3 cup finely chopped pecans 2 1/2 tsp half and half 1/2 cup milk chocolate chips Pinch of cayenne pepper 1/2 cup miniature marshmallows MAKE THE COOKIES---Heat oven to 350°. Line 2 baking sheets with parchment paper. Combine flour, baking powder and baking soda in a bowl. In a separate bowl, beat butter and both sugars until fluffy. Beat in eggs, then beat in vanilla. Add flour mixture, beat until combined. -Stir oats, cereal, chocolate chips, pecans, and marshmallows into dough. Drop heaping tablespoons of dough onto baking sheets. Bake cookies until golden, 12 min. Transfer to cool. -MAKE THE TOPPING---Combine chocolate chips, marshmallows, half and half and cayenne in a saucepan until mixture is smooth. Remove from heat. Stir in pecans. Drizzle mixture over cookies, let set 4 hours, then SERVE... G.
