This is another tried and true recipe which is always well received. 1/2 cup butter 1 cup boiling water 3 squares unsweetend chocolate 2 cups sugar 1/2 cup sour cream 2 eggs, separated 1 teaspoon vanilla 1 teaspoon baking soda 2 cups flour 1 teaspoon baking powder
Preheat oven to 350 degrees. Pour boiling water over the chocolate and butter. Let stand to cool, stirring occasionally until all is melted. Add sugar, egg yolks, and sour cream, which has been combined with the baking soda. Add Vanilla; mix to combine. (I use a wire whisk to mix this cake; it works well.) Add flour and baking powder. Fold in the beaten egg whites. Beat the egg whites to stiff peaks. Pour the batter into a greased and floured 10 inch tube pan. Bake 40-50 minutes. Chocolate Frosting 3/4 cups semi-sweet chocolate chips 1 cup confectioners' sugar 2 tablespoons butter 6 tablespoons heavy cream 1 teaspoon vanilla Combine chocolate chips, confectioners' sugar, butter and cream. Place over medium heat to melt chocolate and butter. Stir occasionally. When the frosting is very warm, and the chocolate is melted, remove from heat and add vanilla. Stir until smooth. The icing will thicken a little as it cools; you may need to add a little more sugar.
