EASY FRUIT CRUMB CAKE
1 1/2 cups thinly sliced fresh apples or peaches
2 cups all purpose flour
1 cup brown sugar, firmly packed
1/2 cup butter, melted
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1 tsp. cinnamon
1/4 tsp. cloves, mace or nutmeg
1 cup buttermilk or yogurt
1 1/2 tsp. vanilla
1 egg

Preheat oven to 350F. 
In a disposable aluminum or any 8 or 9-inch square baking pan (ungreased), 
using a fork, stir together flour, brown sugar and melted butter. Stir until 
mixture resembles coarse crumbs. 

Remove 1 cup of the crumb mixture and set aside. 

In the baking pan, add baking powder, baking soda, salt, cinnamon and spice 
(cloves, mace or nutmeg). With the fork, stir all together until well combined, 
making sure to mix corners and edges well. 

In a small bowl or blender. beat buttermilk, vanilla and egg together until 
well mixed. Pour over the mixture in the pan and mix well with fork or a rubber 
spatula. 

Gently arrange the apples or peaches on top of the batter. 

Sprinkle 1 cup of the saved crumbs over the top evenly; do not mix. 

Bake in preheated oven for 40-50 minutes or until a toothpick inserted in 
center of the cake comes out clean.
