Curry Sauteed Zucchini

1 teaspoon margarine
non-stick cooking spray
1 medium diced zucchini
1 cup chopped onion
1 cup chopped, unpeeled tomato, seeded
1 1/2 teaspoon brown sugar
1/4 teaspoon curry powder
1 tablespoon grated Parmesan cheese

PREPARATION:
Melt margarine in a large skillet coated with cooking spray over low heat.

Add zucchini and onion; saute until tender. Stir in tomato, brown sugar, and
curry powder. Cover and cook 1 minute.Sprinkle zucchini mixture with
parmesan cheese; serve warm.
