Here are three from my recipe files. The third one is one I made yesterday.
(I used lite Spam for the breakfast meat in it)
Title: Ham And Cheese Puff
Categories: Casserole, Breakfast
Servings: 24
2 ea loaves (1 lb each) Italian bread, cut into 1-inch cubes
6 c cubed fully cooked ham
1 1/2 lb Monterey Jack or Muenster cheese, cubed
1 md onion, chopped
1/4 c butter or margarine
16 md eggs
7 c milk
1/2 c prepared mustard
Toss bread, ham and cheese; divide between two greased 13-inch x9-inch x
2-inch baking dishes. In a skillet, sauté onion in butter until tender.
Transfer to a bowl. Add eggs, milk and mustard; mix well. Pour over bread
mixture. Cover and refrigerate overnight. Remove from the refrigerator 30
minutes before baking. Bake, uncovered, at 350° for 55-65 minutes or until
a knife inserted near the center comes out clean. Serve immediately.
Title: Breakfast Casserole

8 sl White bread, cubed no crust
1/2 lb Grated cheddar
6 ea Eggs, beaten
1/2 ts Dry mustard
1/2 ts Salt
1/2 ts Pepper
2 c Milk
1 1/2 lb Link sausage fried and qrtrd
Preheat oven to 350
Butter casserole dish and layer bread and sausage. Pour egg, milk and
spice
mixture over top, making sure bread is soaked. Sprinkle cheese on top,
then press down so egg covers cheese. Refrigerate overnight.
Bake 1 hour. Serve with fresh fruit and breakfast rolls or muffins.
Nyyki's Title: Breakfast Scramble

Servings: 6
1pkg Spanish rice
1 c. Grated cheddar
6 ea Eggs, beaten
1 cn green chilies, chopped
1/2 ts seasoning Salt
2 tb crushed garlic
1 cn mushrooms, pieces and stems
1 lb breakfast meat of any kind
1 md Bell pepper, any color
1 md onion, diced
Prepare rice as per instructions on package. Dice and cook meat if needed.
Dice and remove seeds from bell pepper. Place onions, bell pepper, garlic,
and meat in a hot skillet and cook until meat is browned and vegetables are
soft. Mix in eggs with mushrooms, chilies, and seasoning salt. reduce heat
to a medium low range to cook eggs slowly. After about 3 minutes pour in
rice and turn until eggs are done. Add cheese and serve hot.
