Mike, there are large and giant muffin/cupcake tins.  I make this recipe in 
the large tins and get 11 or 12 depending on my portioning.

I have also included a loaf recipe because I use it as a muffin recipe as 
well. hth Donald



Banana Nut Muffin



1 1/2 Cup All Purpose Flour

1/2 cup chopped nuts (walnut/pecan) *substitute chocolate chips

1 Cup white sugar

1/2 cup shortening

1 egg

1 Cup banana pieces (aprox. 3 medium size bananas)

1 tsp baking soda

2 tbsp water



Combine flour and nuts in mixing bowl

Combine shortening, sugar and egg in separate bowl and beat.

Dissolve baking soda in water.

Add banana and water to sugar/shortening mixture.

Pour wet mixture into flour and lightly mix with large spoon.  Do not over 
stir.

Pour into prepared muffin tin.

Bake at 375 degrees for 20 minutes.



Banana Loaf



½ cup butter

½ cup sugar

1 egg

1 tbsp water

3 teaspoons baking powder

½ teaspoon baking soda

1, 1/2 cup mashed banana

½ cup chocolate chips

1/4 cup chopped walnuts

2 cups all purpose flour



Cream butter, sugar, egg and banana.

Dissolve baking soda in water and mix into butter mixture.

Add chocolate chips, nuts.

Mix in flour and baking powder with banana mixture.

Pour into greased 8x4 pan

Bake at 325 for 1 hour.
