Zucchini Bread

2 cups grated zucchini (about 1 medium-sized zucchini)
1 cup butter or margarine
3 eggs
3 cups sugar
3 cups flour
1 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
3 teaspoons cinnamon

Recipe makes 2 large loaves. Bake at 325 for 1 hour (I think it usually 
takes a little longer). Allow bread to cool for 20 minutes before removing 
it from the pans.
