Carrot Raisin Bran Cookies 1 1/2 cups all-purpose flour 1 teaspoon ground cinnamon 1/2 teaspoon baking soda 1/4 teaspoon salt 1/2 cup soft (tub) margarine 3/4 cup firmly-packed brown sugar 1 egg 1 1/2 cups grated carrots 2 tablespoons apple juice or water 1/2 teaspoon vanilla extract 3 cups Bran Flakes cereal 1 cup raisins
1. Stir together flour, cinnamon, soda and salt; set aside. 2. In large bowl cream together margarine and sugar until fluffy; beat in egg. Add carrots, juice and vanilla; mix well. Stir in flour mixture, then cereal and raisins until well combined. 3. Drop by rounded tablespoonful about 5 cm (2") apart onto ungreased baking sheets. 4. Bake at 375° F 8 to 10 minutes or until golden brown. Remove to racks to cool completely before storing.
