Howdy Everyone,
Here is the newest Cooking In The Dark, hot off the griddle!
This week we make an easy and delicious dish,
Crock Pot Chicken Tortilla!
And it is delicious!
I made two batches of it for the  audience and
band this week and nothing was left...heck, even
the crock pot was licked clean!
I also squeeze in  a second Mexican Food
Delight...but you will have to listen to find out what it is!

Here is the basic recipe.
I did alter some of the ingredients a little,
substituting here and adding there so give it a
listen to find out what I did...

Crockpot chicken tortillas

4 pounds boneless skinless chicken thighs
2  cans cream of chicken soup.
1 can rotel   tomatoes, drained
2 table spoons quick cooking tapioca (sub small
box of tapioca pudding; not instant)
1 onion diced
2 cups cheddar cheese or mozzarella cheese, grated
10 to 12   flour or corn tortillas
2 jalapenos, seeded and diced (optional)
Sour cream for Garnish (optional)
Celantro  For Garnish (optional)

Directions

Cook chicken and
cut in to bite size pieces.
Mix with cream of chicken soup, rot ell tomatoes, and pudding
Set aside
spray crock pot with pam spray.
Line bottom of potwith  tortillas, broken in to pieces.
add one third of chicken and soup mix.
sprinkle with 1/2 of chopped onion and 1 cup shredded cheese.

Layer tortillas,  1/3 of chicken mixture and diced jalapenos..
Repeat all layers and top with tortillas.
You should have 3 layers, the bottom and top
Having tortillas, chicken, cheese and onions.
The middle with tortillas, chicken and jalapenos.
Add a little cheese if you want too.it will not hurt anything!
Cover and cook on low 6 to 8 hours
 or high 3 hours.

Serve on plates or bowls!
Garnish with a dab of Sour Cream and a sprinkle of fresh celantro!
