MEXICAN MEAT LOAF
(10-12 servings)
1 pound ground beef
1 pound ground pork
1 cup bread crumbs
1 onion, diced
1/4 cup milk
1 tablespoon chopped parsley
1 cup diced green pepper
1 egg, beaten
1 teaspoon salt
1 cup tomato soup
Mix together until thoroughly blended the ground beef, ground pork,
bread crumbs, diced onion, milk, chopped parsley, diced green pepper,
beaten egg and salt. Place meat loaf mixture into a two quart
heat-resistant glass loaf pan. Pour tomato soup over meat. Bake in
moderate oven (350 degrees Fahrenheit) for one hour.
