Great Ways With Ground Meats
Miss Thompson's Meatloaf
1 pound lean ground beef
1/2 pound ground veal
1 medium yellow onion, chopped
1 1/2 cups fresh bread crumbs
1/2 cup chopped fresh Italian parsley
1/4 cup ketchup
1 tablespoon Dijon style mustard
2 eggs, beaten
1 teaspoon dried thyme leaves
Salt and freshly ground black pepper to taste
For Filling:
1/2 cup half and half, scalded
8 slices white bread, crusts trimmed, diced
8 ounces blue cheese, crumbled
1 egg, lightly beaten
Combine the ground meats, onion, bread crumbs, parsley, ketchup, mustard, 
eggs, thyme, salt and pepper, mix well. Spread the mixture out on a large 
piece of waxed paper or parchment paper into a rectangle, about 15 by 12 
inches. Preheat oven to 375 degrees. Pour the scalded half and half over the 
bread in a medium size bowl, mix well. Add the cheese. Stir in beaten egg. 
Mix with a fork until smooth. Spread the cheese mixture over the meat 
mixture, leaving a 1 inch border on all sides. Using the waxed paper as an 
aid and starting from one short side, roll up the meat like a jelly roll. 
Peel back the paper as you roll. Place, seam side down, on a foil lined 
baking sheet. Bake for about 1 hour. Cut into thick slices. Serve 
immediately.
Tips:
Try to make your layer of meat as even as possible. Turn the edges with your 
knife. Roll up meatloaf carefully. When done correctly, the spiral of blue 
cheese in each slice should be very distinct.
Microwave Directions:

eggs, thyme, salt and pepper, mix well. Spread the mixture out on a large

seam side down, on a microsafe baking dish. Microwave on high for 8 minutes. 
Let rest 5 minutes. Microwave again on high for 6 minutes. Cut into thick 
slices. Serve immediately.
Makes 6 servings.
