Almond Cheesecake Bars

 

These delicious bars are so easy to make, and they are great for potluck 
meals. I never have any leftovers! Recipe is from Taste of Home, with my 
own variations added, of course.

ALMOND CHEESECAKE BARS
 
2 cups all-purpose flour
1 cup butter, softened (can use margarine, butter gives a richer flavor)
1/2 cup powdered sugar
1/2 cup almonds, chopped fine
 
Filling:
8 oz cream cheese, softened to room temperature
1/2 cup sugar
1 tsp almond extract
1/2 tsp vanilla extract
2 eggs, lightly beaten
 
Frosting:
1 1/2 cups powdered sugar
1/4 cup butter, softened
1 tsp almond extract
4 to 5 teaspoons milk
 
Combine the first 4 ingredients; press onto the bottom of a greased 
13x9x2-inch baking pan. Bake at 350F for 20-25 minutes or until golden 
brown.  

For filling, in a small bowl, beat cream cheese, sugar and extracts 
until smooth. Add eggs; beat on low speed just until combined. Pour over 
crust. Bake for 15-20 minutes or until center is almost set. Cool on a 
wire rack. 

For frosting, combine the frosting ingredients in a medium bowl until 
smooth; spread over bars. Store in refrigerator. Yield: 24 to 36 bars, 
depending on how you cut them. (We like them larger!)
