TUNNEL OF FUDGE CAKE Makes 12 servings. Cake: 1¾ cups granulated sugar 1¾ cups (3½ sticks) butter, softened 6 large eggs 2 cups confectioners' sugar 2¼ cups all-purpose flour 3/4 cup unsweetened cocoa powder 2 cups chopped walnuts Glaze: 3/4 cup confectioners' sugar ¼ cup cocoa powder 1½ to 2 tablespoons milk To prepare oven, pan: Heat oven to 350 degrees. Grease and flour 12-cup bundt pan (or 10-inch tube pan). Set aside. To make cake: In large bowl, combine granulated sugar and butter. Beat until light and fluffy. Add eggs, 1 at a time, beating well after each addition. Gradually add 2 cups confectioners' sugar. Blend well. By hand, stir in flour, cocoa powder and walnuts until well blended. To bake cake: Spoon batter into greased and floured pan. Spread evenly. Bake for 45 to 50 minutes or until top is set and edges begin to pull away from sides of pan. (Note: Because this cake has a soft tunnel of fudge, an ordinary doneness test cannot be used. Accurate oven temperature and baking time are critical.) Cool upright in pan on wire rack for 1½ hours. Invert onto serving plate. Cool at least 2 hours. To make glaze: In small bowl, combine confectioners' sugar and cocoa powder. Add just enough milk for desired drizzling consistency. Spoon glaze over cake, allowing some to run down sides.
