Mama's coconut cake

2/3 cup butter
1 cup sugar 
4 eggs, separated
2 cups sifted cake flour
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup coconut milk
1 teaspoon vanilla 
1/2 cup grated coconut 

In a mixing bowl, cream butter until fluffy. Add 1/2 cup sugar,
beating until light and fluffy. Add egg yolks, beating well. 
Add sifted dry ingredients alternately with the coconut milk. 
Stir in vanilla and coconut.
Beat the egg whites with remaining 1/2 cup sugar until soft 
peaks are formed; fold into the cake batter. Pour batter into 
two greased and floured 8 or 9-inch layer cake pans and bake at 
375° for about 25 minutes. Remove fresh coconut cake to wire 
racks to cool. Then frost with 7 minute frosting.

7 minute frosting

1 3/4 cups sugar
1/2 cup water
4 egg whites, room temperature
1/2 teaspoon cream of tartar
1 teaspoon vanilla extract
Grated coconut

In a saucepan, bring sugar and water to a boil. Boil for 3-4
minutes or until a candy thermometer reads 242 degrees F
(firm-ball stage). Meanwhile, beat egg 
whites and cream of tartar in a mixing bowl until foamy. 
Slowly pour in hot sugar mixture; continue to beat on high for 
7 minutes or until stiff peaks form. 
Add vanilla. Continue beating until frosting reaches desired
consistency, about 2 minutes. Frost cake then sprinkle coconut 
on sides and top of cake.

Notes: If you do not keep cake flour on hand there are a couple
of things you can use as a substitute, you can make a good
substitute by placing 2 tablespoons cornstarch in bottom of 
1 cup measure then fill it with sifted all purpose flour. 
This will make it light like cake flour. In a pinch if you do 
not have any cornstarch you can just remove 2 tablespoons per 
cup of flour. This method will make it a touch more dense.
Also my mother used fresh coconut and grated it and made her 
own coconut milk but you can certainly substitute canned 
coconut milk (unsweetened) and a bag of coconut.
