VEGETARIAN RUBEN SANDWICH

1 pkg (6 oz) sliced baby portobello mushrooms
2 T olive oil, divided
1 pkg (6 oz) fresh baby spinach
2 T butter, softened
8 slices marble rye bread
1/4 c prepared Thousand Island salad dressing
8 slices process Swiss cheese
1 c sauerkraut, rinsed and well drained

In large skillet, saute mushrooms in 1 T oil til lightly 
browned
Remove with slotted spoon and set aside.
In same skillet, saute spinach in remaining oil til wilted.
Remove from heat.
Spread butter over one side of each slice of bread.
Place four slices, buttered side down, on griddle.
Spread with half of salad dressing.
Top each with one slice of cheese and a fourth of mushrooms,
spinach and sauerkraut.
Add a cheese slice to each.
Spread remaining salad dressing over unbuttered side of 
remaining bread
Place buttered side up over cheese.
In small skillet over medium heat, toast sandwiches on each 
side til cheese is melted.
