VERMONT BAKED BEANS 1 lb. pea or Navy beans 1 med. onion, peeled 1/2 c. sugar (or 1/4 c. maple syrup & only 1/4 c. sugar) 1 tsp. salt 1 tsp. ginger 1/4 lb. salt pork, cut into strips or cubes Pick over and wash beans. Then put them to soak overnight. Next day parboil beans until barely tender and put into a bean pot. Now bury onion in bottom of the pot under beans. Add sugar, salt and ginger. Mix. Next put salt pork on TOP of beans. Add boiling water to barely cover beans. Cover pot and bake for 6 to 8 hours. Add more water as needed. Remove cover from pot for the last half hour of cooking so that the pork may brown. This recipe serves 6 to 8 people.
