Rum is normally a flavoring in most recipes. Sometimes, it can be a key
ingredient. Sometimes, it can also be used for savory reasons. If any type
of alcohol is used in a marinade, the major purpose is to tenderize the meat
to be cooked. Also, I would assume that--if used in the dough of a coffee
cake, for example--its sugar could be used to help feed the yeast in a
dough.
