Holiday Banana Bread

 

Source: Mrs. Paul Houston - Favorite Recipe Book of the Sacred Heart Church, 
Oxford Junction, Iowa

 

1/3 cup shortening 

2/3 cup granulated sugar 

2 slightly beaten eggs 

1 cup mashed bananas

1/2 cup chopped nuts 

1 3/4 cups all-purpose flour 

2 3/4 teaspoons baking powder

1/2 teaspoon salt

1 cup mixed candied fruit

1/4 cup raisins

 

Sift dry ingredients and add nuts.

 

Place shortening in bowl. Gradually beat in sugar. Add eggs, flour and bananas. 
Fold in fruit and raisins. Bake 350 degrees F for 60 to 70 minutes.

 

Let cool one-half hour.

 

Makes two small loaves.
