Here's the original recipe for the Red Velvet cake. Note that this recipe
does not use cream cheese frosting, but instead uses the original frosting
recipe. Cream Cheese and Butter Crème frostings have become popular for this
cake because they last longer in a bakery case, but purists eschew them as
incorrect or, in some extreme cases, a heresy against the culinary gods.

½ c butter or margarine
1½ c sugar
2 md eggs
1 ts vanilla
1 sm bottle of red food coloring
3 tb (level) cocoa
2½ c sifted cake flour
1 c buttermilk
1 ts salt
1 tb vinegar
1 ts soda
Icing:
1 c milk
3 tb flour
1 c butter or margarine (2 sticks)
1 c sugar
1 ts vanilla
Cream sugar, eggs, vanilla and butter or margarine. Make a paste with the
cocoa and red food coloring.; add to the first mixture. Alternately add
flour and buttermilk. Mix soda and vinegar in sm bowl; add to batter.
Blend. Bake in 3 9-inch, or 1 18x9-inch pan for 20 to 25 minutes in a
350°oven. Let cool completely. Meanwhile, Cook milk and flour in a sm
sauce pan stirring constantly until thickened. Let cool completely. Cream
butter or margarine and sugar very well. Add vanilla; blend. Combine with
first mixture; beat well. Spread over cake.
