Here is the recipe for the whipped shortbread cookies I took to the pot luck
lunch on Friday.
Of course, I doubled the recipe.

Whipped Shortbread

1 cup soft butter.
½ cup icing sugar.
1-1/2 cups all-purpose flour.
½ cup cornstarch.

Using an electric mixer, beat butter until fluffy.
Slowly add icing sugar and continue to beat until light and fluffy.
Sift flour and cornstarch.
Add dry ingredients gradually to creamed mixture beating constantly.
Drop by teaspoonfuls on to greased cookie sheets and press each cookie
slightly with the tines of a floured fork.
I just rolled the dough in to balls and put them on a parchment paper lined
cookie sheet.
Decorate cookies if desired.
Bake at 350 for 10-12 minutes.
