Sweet Potato Pound Cake
"More soulful recipies" 3-1/2 cups flour 1 t salt 1 t baking soda 1 t baking powder 1 t each allspice, cinnamon and nutmeg 3 c sugar 1 c shortening 1/2 c butter, softened 1-1/2 c cooked mashed sweet potatoes 6 eggs 1-1/4 c buttermilk 1/2 t vanilla extract 1 c chopped pecans Directions: Mix flour, salt, baking soda, baking powder, allspice, cinnamon and nutmeg in bowl. Beat sugar, shortening and butter in mixing bowl til creamy, scraping bowl occasionally. Beat in sweet potatoes til blended. Add eggs 1 at a time, beating well after each addition. Add flour mixture alternately with buttermilk, beating well after each addition. Beat in vanilla. Grease and flour bundt or tube pan. Sprinkle 1/2 of pecans over bottom of prepared pan. Spoon batter over pecans and sprinkle with remaining 1/2 c pecans. Bake 350 deg 70 mins. Cool in pan 10 mins. Remove to wire rack and cool completely.
