ANGEL FOOD CAKE FROM SCRATCH

 

1 1/2 cups egg whites at room temperature

1 1/4 cups sifted cake flour

1/2 cup sifted sugar

1/4 tsp. salt

1 1/4 tsp. cream of tarter

1-2(according to your taste) tsp. vanilla

1/4 tsp. almond extract

1 1/3 cups sifted sugar

 

Measure flour and the 1/2 cup of sugar. Sift together 4 times. 

Combine the egg whites with salt, cream of tarter. vanilla and 

almond extract. Beat until moist peaks form. Add the remaining 

sugar in 4 additions, beating until blended after each addition. Sift 

in the flour mixture in 4 additions, folding in with a large spoon 

each time, turning bowl often. Place in ungreased 10" tube pan. 

Bake at 375° for 35-40 minutes. Cool upside down on cooling 

rack. Loosen and remove cake.

 

Variation: If a chocolate cake is desired, add 2 Tablespoons of 

cocoa.
