Not having used canned artichokes before, I'm a little concerned about the
quantity that this recipe makes.  Do either of you ever have occasion to
double it?

Hi Dixie, We make the same artichoke dip recipe.  We have discovered
that the dip is just as good -- maybe better -- if we use canned
artichoke bottoms, which are a little cheaper than the canned
artichoke hearts, and sometimes we use 3 cans, which just makes the
dip taste even more artichoky! -- saving one out todecorate the center
of the dip!  Merry Christmas!
