Day Eight                 Volume I Issue VIII

 

On The Eighth Day of Christmas Cookies.

I thought I'd bake for you. . .

Now you might get a laugh out of this one. I acquired this recipe from a lady 
that I worked with 20 years ago. As I was going through all my recipes I really

wanted to post this one because it is a good one and an easy one to make for 
the Holidays. But I couldn't read my own writing :0) so I was not sure what

the name really was, or the proper spelling. Thanks to Jackie, she wrote and 
gave me the correct spelling. Thanks so much.

 

1 cup butter

1 cup sugar - divided

2 egg yolks

grated rind of 1 lemon

1 cup finely grated almonds   Sift almonds, using the very fine for topping the 
cookies. The other in the cookies.

3 1/4 cup flour  approximately

 

** Save 1/4 cup sugar and 1/2 cup almonds for topping

 

Cream together butter  and 3/4 cup sugar.

Add egg yolk, one at a time.

Add lemon rind and enough flour to stiffen. add almonds last.

Roll out 1/4 inch thick, cut into diamond shapes. Brush with egg whites and 
sprinkle with sugar and nuts.

 

Bake 350º for 10 minutes or until brown on edges.

Cool on wire rack.

 

I roll my dough on a pastry cloth and use a pizza wheel cutter to cut my dough. 
It works great.

Christmas morning

 

Sour Cream Coffee Cake

 

1/2 cup butter

1 cup sugar

2 eggs

 

1 cup sour cream

1 teaspoon vanilla

 

2 cups sifted flour

1/2 teaspoon salt

1 teaspoon soda

1 teaspoon baking powder

 

Topping

1 cup brown sugar

2 teaspoons cinnamon

1 cup chopped nuts

butter as needed

 

Cream butter and sugar. Add eggs one at a time beating for one minute. Sift dry 
ingredients. Add alternately with sour cream and vanilla. Grease and flour

tube pan. Pour half of mixture into pan. Spread with half of topping, cut thin 
slices of butter and lay here and there on top. Add remaining mixture, top

with rest of topping.

Bake 45 minutes at 350º

Instant Coco Mix

 

8 ounces nonfat dry milk powder

3 cups powdered  sugar

16 ounce Nestle's Quick

6 ounce Creamora

1 large box of milk chocolate instant pudding

 

Directions:

 

Sift together to completely mix ingredients. Store in an air tight container.

Individual serving =

4 heaping teaspoons in mug and fill with boiling water.
