Day Eleven                 Volume I Issue XI

 

On The Eleventh Day of Christmas Cookies.

I thought I'd bake for you. . .

 

Cake Mix Cookies

 

1 package cake mix.

(you can use yellow, white, or even chocolate)

1 cup chocolate chips

2 eggs

1/2 cup Hellmann's Mayonnaise  - Do not use Salad Dressing or light mayonnaise. 
. .

1/2 cup walnuts chopped. or pecans if you prefer.

 

Preheat oven 350º

Mix the dry cake mix with the chips and nuts. Add the eggs and mayonnaise, mix 
until well blended. Batter will be stiff. Drop spoonfuls onto greased cookie

sheets.

Bake 10-12 minutes.

yields 4 dozen.

 

Try variations of this. Using the chocolate cake mix with peanut butter chips 
and nuts. Or  leave out the chocolate chips and just add the nuts for a pecan

sandie type cookie. Add a Tablespoon of apple pie spice, or cinnamon, or ginger 
for a spice type cookie. Experiment with different flavors to come up with

a new one.

 Happy Holidays . . .

 

  Ideas for Unique Gifts

 

I try each year to come up with a unique idea for gifts for my husband. Do you 
have people on your list that are hard to buy for because they have everything

under the sun? I don't particularly like to give money. Well . . . . .

 

One year I got brand new $1.00 bills from the bank. I folded them like a gum 
chain (this dates back to my childhood in the 50's)and put it in his stocking.

 

How to make a gum chain: Take the bill and fold it in half long ways, and then 
in half long ways again. Fold the length in half, open up and fold each end

toward the middle. Then refold the first fold, you should have a small 
rectangle. Continue folding the bills. To connect them you insert the loose ends

of one bill through another bills folded part. Pull it tight and insert another 
bill through the ends. This will look like a zig zag. Continue to make

chain as long as you like.

 

If you have patience, crack walnuts very carefully take out the meat and put a 
quarter in it and glue it back together. Give a brown bag of walnuts tied

with a bow.

 

We go out to eat quite often. I always give him gift certificates from all our 
favorite restaurants. Last year to make it a little different, I put all

the certificates on the back of food packages and gave him the bag of 
groceries. I must say. it took him be surprised.

 

Italian ~ box of pasta

Mexican ~ Bag of tortilla chips

Red Lobster ~ Mix for cheddar biscuits

Fridays ~ appetizers

Steak House ~ bag of peanuts

Movie Certificate ~ popcorn

 

Wrap a gift in something other than paper.

A cookbook wrap in a kitchen towel, tie it up with a bow and add a cookie 
cutter or wooden spoon.

 

Wrap a baby gift in a baby blanket tied with a small ornament or toy.

 

Wrap a small gift and put in it a bigger box and wrap it again several times. 
This can be frustrating for the person, but I have fun with it.

 

Make a donation to a charity in someone's name.

 Wassail for the Holiday

 

Definition list of 8 items

1 orange, washed

1 lemon, washed

1 1/2 teaspoons whole cloves

3 (3-inch) sticks cinnamon

1/2 cup sugar

1 gallon apple cider

2 cups orange juice

1 cup fresh lemon juice

Peel orange and lemon, keeping the rind intact as you peel. Insert cloves into 
the rinds.

 

Combine the clove-studded rinds, cinnamon sticks, sugar and apple cider in a 
large cooking pot; bring to a boil. Cover, reduce heat, and simmer for 10 to

12 minutes. Remove from heat and set aside to cool completely.

 

To serve, add orange and lemon juices to mixture and heat until hot, but not 
boiling

English Toffee

 

1 pound butter

2 cups sugar

 

Slowly cook over med. low heat, to 305º (about 45 minutes).

Pour into 10x15 jelly roll pan.

 

Do not scrape the pan

Let stand about 5 minutes then lay 5 Hershey candy bars on top; let stand 1 
minute then spread lightly, covering the entire surface.

 

Sprinkle with chopped pecans; press lightly.

Let stand several hours (do not refrigerate). Break into pieces to serve.
