Dried Cherry Biscotti

5 cup flour
6 tsp. baking powder
1 ½ tsp. salt
1 cup butter
1 ½ cups white sugar (not icing sugar)
1 tsp vanilla
4 eggs

Mix well then add 2 cup dried cherries
Slowly add flour and mix well. Dump out on to lightly floured
surface and kneed and make 2 long logs and put on cookie sheet
lined with parchment paper.
Bake at 350 degrees for 20 minutes.
Take out of the oven and let sit to cool about 30 min.
Lower oven to 300 degrees
Then carefully slice into ¾ in slices. Lay them cut side down
and bake for 10 minutes turn them over and bake for 10 more min.
Then turn your oven off and leave them in the oven to finish
cooking and cool.
With the door closed for 8hours or over night is best.
Then you can melt chocolate of your choice and coat one side of
the biscotti with chocolate. Put in refrigerator to set the
chocolate
