Coconut Butterballs

1 cup butter or margarine

1/4 cup sifted powdered sugar

1 tsp. lemon extract

2 cups sifted flour

1-1/2 cups flaked coconut

Sifted powdered sugar

Cream butter until light and fluffy, gradually adding 1/4 cup powdered

sugar, then lemon extract. Blend in flour, then coconut. Mix well.

Shape dough into 1 inch balls, place on ungreased cookie sheets and

refrigerate for 15 minutes. Bake at 325 for 10 - 12 minutes, or until done,

and then roll cookies, while still warm, in sifted powdered sugar.
