Coconut Fudge Brownies

This were quite good and I added about 1/4 c miniature marsh mellows

on top instead of nuts.

Be warned these are rich

makes 9-12 brownies

3/4 c flour (can use gluten free if desired)

1/4 c unsweetened cocoa

1/4 tsp salt

1/4 c vegetable oil, shortening, or grape seed oil

(I used shortening)

1 c sugar

2 eggs

1-1/2 tsp vanilla extract

1/2 c unsweetened flaked coconut

1/3 c to 1/2 c chocolate chips

1/4 c chopped walnuts optional

Preheat oven to 350 degrees.  Grease an 8 inch pan.

Sift cocoa, flour, and salt in a small bowl. In another bowl cream

together sugar, shortening, eggs and vanilla.  Gradually incorporate

the cocoa mixture into the wet mixture stir until blended.

Fold in coconut.

Pour into the baking pan.  Sprinkle with chocolate chips and walnuts

or marshmallows if desired.

Bake 25-35 minutes or until toothpick comes out clean from near center.
