Lemon Coconut Pixies

1/4 cup (1/2 stick) butter or

margarine, softened

1 cup sugar

2 eggs

1 1/2 tsp freshly grated lemon peel

1 1/2 c ups flour

2 tsp baking powder

1/4 tsp salt

1 cup sweetened coconut flakes

powdered sugar

Heat the oven to 300 F. Beat the butter, sugar, eggs, and lemon peel in a large

bowl until well blended. Stir together the flour, baking powder, and salt.

Gradually add to the lemon mixture. Beat until blended. Stir in the coconut.

Cover and refrigerate the dough about 1 hour or until firm enough to handle.

Shape into 1-inch balls. Roll in the powdered sugar. Place 2 inches apart onto

ungreased cookie sheets. Bake for 15 to 18 minutes or until the edges are set.

Immediately remove from the cookie sheets. Place on wire racks to cool

completely. Makes about 4 dozen cookies.
