Sweet n Sassy Potato Casserole

3 pounds of sweet potatoes, peeled and cut into 1 inch pieces
3 Anjou pears or tart apples, peeled and cut into 1 inch pieces
1/2 cup of packed light brown sugar
1/2 cup of maple or pancake syrup
2 tablespoons of Franks red Hot cayenne Pepper Sauce
2 teaspoons of ground cinnamon
1/4 teaspoon of ground allspice
2 tablespoons of unsalted butter

Place sweet potatoes in large saucepan; cover with water. 
Bring to a boil. Cook 10 to 15 minutes or until tender. Drain. 
Place potatoes and pears in greased 
3 quart baking dish.
Preheat oven to 400F. Combine sugar, maple syrup, Franks Red 
Hot sauce and spices in medium bowl. Pour over potatoes and 
pears. Dot with butter. Cover tightly.
Bake 30 to 35 minutes or until heated through and pears are
tender. Baste mixture with sauce occasionally. Sprinkle with
chopped toasted almonds, if desired. 

Makes 8 servings
