CWL COCOA SIRUP SUPREME 

 

Temperature, medium heat.

Time, 5 minutes

Yield, 2 cups

 

¾ cp cocoa 

1 cp sugar

1/8tsp salt

1 cp hot water

1tsp vanilla

 

Mix sugar, cocoa, and salt together in a saucepan with the back of a wooden 
spoon.  Add water, gradually, and mix well.  Bring this mixture to a boil.  
Boil gently for 5 minutes to remove the raw starch flavor and texture of the 
cocoa.  Cool and add vanilla.  Pour into a glass or plastic container, cover 
tightly, and store in the refrigerator, where it will keep for several weeks.

USING COCOA SIRUP SUPREME

 

Temperature, medium heat.

Time 10 minutes.

Yield, 2 servings.

 

2tbs Cocoa Sirup Supreme

1 cp milk

 

Combine cocoa sirup and milk in the top of a double boiler.  Mix well by 
stirring, cover, and place over lower part of the double boiler, which is one 
half full of water.  

 

Place over medium heat.  When water reaches boiling point, time the cocoa for 
ten minutes, and it will be the correcting serving temperature.  Beat with 
rotary beater to remove any skin that may have formed on top of the cocoa.  

 

Serve immediately or cover and keep warm over hot water on very low heat.

 

To serve neat, uniform portions, select a container such as a half cup 
measuring cup which will fill your coffee cup to within ¾ inch of the top, 
measure it as you do liquids in a recipe, and fill each cup.  Put a marshmallow 
into each cup before adding cocoa if desired.  Enjoy.
