I like quinoa. You can get spaghetti and curly pasta made from quinoa. It has a stronger flavor than wheat or rice pasta, so you can't use sauces with a subtle flavor. You can use something like olive oil to coat the pasta and eat it that way. The usual tomato based spaghetti sauce works fine.
You can use the quinoa as a base for salads, as you would brown rice, or bulgur.
