Made an apple pie yesterday and got this recipe off the box. Sounds good.
Cranberry Walnut Oatmeal Cookies
3/4 cup CRISCO
3/4 cup granulated sugar
3/4 cup packed brown sugar
2 eggs
2 teaspoons vanilla extract
1 cup All Purpose Flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon salt
2 3/4 cups oatmeal
1 cup dried cranberries
1 cup chopped walnuts (optional)
PREHEAT oven to 375°.
Lightly grease or line baking sheets with parchment paper.
COMBINE flour, baking soda, cinnamon and salt in small bowl.
BEAT shortening and sugars in large bowl at medium speed with electric mixer
until creamy.
Beat in eggs and vanilla.
Beat in flour mixture gradually.
Stir in oatmeal, cranberries and if using walnuts.
DROP by rounded tablespoons about 2 inches apart on prepared baking sheets.
BAKE 10 to 12 minutes or until light brown.
Cool on baking sheets 2 minutes.
Place on cooling rack to cool completely.
*Replace dried cranberries with 1 cup dried cherries, blueberries, currants,
candy coated chocolate candies, raisins or
favourite flavour chocolate chips.
*Replace walnuts with 1 cup chopped pecans, pistachios or hazelnuts.
MAKES: 36 cookies
