Malt O Meal Breakfast Muffins
Bake at 400° 18-20 minutes
Yield 12 Muffins
1 1/4 C All Purpose Flour
3/4 C Malt-O Meal
1/2 C Sugar
3/4 C Milk
1/2 C Applesauce (or increase milk by 1/2 c)
1/4 C Vegetable Oil
1 Egg
1 T Baking Powder
1/2 tsp Salt
1 tsp Vanilla
Optional: Jam of choice, raw sugar or sprinkles for topping.
In a large bowl combine all dry ingredients and mix. Add all remaining
ingredients, except jam. Stir until all ingredients are moistened.
Fill lined or greased muffin tins 1/2 full and create a well in the
middle to add 2 teaspoons of your choice of jam. Top jam with batter
until tin is 3/4 full. Sprinkle top with raw sugar or decorative sugar
sprinkles. Bake in preheated 400° oven for 18-20 minutes, until golden
brown on top.
Jams I have tried: Apricot, raspberry and strawberry. Next, I will try
some homemade Pineapple jelly M-m-m!!
