PEANUT BUTTER IN THE MIDDLE COOKIES
COOKIE DOUGH
1-1/2 cups plain flour
1/4 cup cocoa
1/2 teaspoon baking soda
1/2 cup sugar
1/2 cup margarine
1/2 cup firmly packed brown sugar
1/2 cup peanut butter
1 teaspoon vanilla
1 egg
Beat sugar, brown sugar, margarine and peanut butter till fluffy. Add
vanilla and egg; beat well. Stir in dry ingredients. Roll into 30 small
balls and set aside.
FILLING
3/4 cup peanut butter
3/4 cup powdered sugar
Mix and shape into small balls.
For each cookie, shape about 1 tablespoon dough around 1 peanut butter
ball,
covering completely. Place 2 inches apart on ungreased cookie sheet.
Flatten
with glass bottom dipped in sugar. Bake at 350 degrees for 7 to 9 minutes
or
until set. Makes 30 cookies. From Amanda.
