It depends on the size of the carrots, of course. I use a hand grater if I
just am grating one or two carrots, otherwise, I drag out my food processor
that does it in 2 seconds.
If you really like carrots, just put in the amount you think you would
like - 1 carrot, 2 carrots, and so on. If you are not so fond of carrots,
use less.
I use a grater with a larger grate on it to make the work go faster and the
carrots are recognizable in whatever I'm making - stir fry or salad.

use a potato peeler. I don't know how many carrots makes a cup or
