PEANUT BUTTER SQUARES WITH JAM OR JELLY


Makes 16 squares.



1 cup grape or strawberry jam
3/4 cup creamy peanut butter
3/4 tsp salt
1/2 cup whole wheat flour
3/4 cup salted roasted peanuts
1 tsp vanilla
1 stick unsalted butter, cut into pieces
3/4 cup light brown sugar
1 cup flour


Heat oven to 350°. Line an 8" square baking pan with an 8x13" sheet of 
parchment. Using a blender or food processor, pulse peanuts until chopped. 
Transfer to a bowl. In processor bowl, mix 2 flours, brown sugar and salt. Add 
butter, pulse until mixture resembles coarse meal. Add peanut butter and 
vanilla, process until crumbly. -Measure out 2/3 cup of crumb mixture, transfer 
to bowl of peanuts. Dump remaining crumb mixture into pan, pat down. Spoon jam 
on top, spread to within 1/2" of edges. Sprinkle peanut crumb mixture over top, 
going all the way to edges of pan.
-Bake until top is golden brown and jam is bubbling 45 min. Transfer pan to a 
rack to cool completely. Grasp parchment, lift entire dessert out of pan. Place 
on a cutting board, cut into 16 squares, then SERVE...  Enjoy.  From Russie.
