We made this at the cooking group today.
It was good!
and the chorizo was homemade!

       The Green Soup

2 lbs Potatoes (Golden Yukon)
1 lb onions
2 tbls. Olive oil
2 liters chicken broth
2 Chorizo (sausage)
1 bunch Collard

Method:

Peel and cut potatoes in chunks. Cut onions in chunks, add to pot. Then
pour in chicken broth and olive oil and bring mixture to a boil, till
potatoes are tender.

Now pureed in a blender the boiled mixture. Collard needs to be washed and
then roll leaves very thin and cut as thin as possible then add to pureed
soup mixture and boil for another 5-10 minutes uncovered.

Add salt to taste. Cook and slice Chorizo and put 3-4 slices in bottom of
soup serving bowls and pour soup over top. ( May put more sausage according
each to person)
