Easy Apple Butterscotch Muffins

3 c Self rising flour
1/4 c Sugar
2 Eggs beaten
1 1/2 c Milk
1/3 c Salad oil
6 oz Butterscotch chips
1 c Apples peeled and diced

Combine flour and sugar. Combine remaining ingredients; add all at once to 
flour mixture, stirring only until flour is moistened. Fill greased muffin cups 
2/3 full. Bake at 425~ for 20 to 25 minutes, or until golden brown.
