Hi folks, each week, I get a box of vegetables from a nonprofit who
works to make veggies affordable to all--wish it were national!
Anyway, my box this week will include okra. One of my Facebook
friends mentioned roasting it with salt, pepper, and olive oil, but I
am trying to avoid the slightly slimy texture okra gets when it is
anything but deep fried. I live in an apartment, so don't have a lot
of room for the fancy gadgets Dale uses (but I do love hearing about
them.) Could I oven-fry the okra, or would roasting produce that
yucky texture I'm trying to avoid?
Any suggestions would be appreciated, thanks!
Jamey
