I don't even like coleslaw and it sounds really good.
I picture a chicken salad.
You probably could turn it into something like that.

Hi all, wow are there some accomplished bakers on this list!  I love
carrot cake, and I now have more recipes than I know what to do
with--awesome!  Along the lines of shredded veggies, I am going to
post a recipe for crunchy cole slaw, and it is wonderful to take to a
picnic because it is made with a vinegar base.  People love this
stuff, so I typically make a full recipe, even if I am attending a
gathering of only twelve or so.  Less than that, you could probably
get away with making a small batch.  So, a tiny bit of explanation:
the amount listed first is for the full recipe, and the amount listed
second is for the half recipe.  Shredded cabbage comes in packages at
the store, about 1-1/2 lb each, but I have been known to core a 3-4 lb
head of cabbage and run it through the food processor to shred.  For
the sunflower seeds, you will want the kind without the shell, or you
will need to shell them first.
This travels well in a large mixing bowl with a lid or plastic wrap to 
cover.
I usually put the chrunchies in a plastic quart-size ziplock bag, and
the marinade in a tupperware glass with lid, and toss everything
together when I get to the picnic.


CRUNCHY COLE SLAW

The night before serving, mix in a sealed container:
[Original recipe:]                                        [Half size:]
1/3 cup                Apple cider vinegar                2 Tbsp. + 2 tsp.
½ cup                        Oil                                ¼ cup
½ cup                        Sugar                                ¼ cup
2 pkgs.                Chicken flavor packet                 1 pkg.
from Ramen noodles

Immediately before serving-- Toss dressing with-
2-3 lbs.                 Shredded cole slaw                1 - 1½  lbs.
6 oz.                        Slivered or sliced almonds        3 oz.
6 oz.                        Sunflower seeds                3 oz.
2 pkgs.                Ramen Noodles (broken)        1 pkg.
        --and add well-shaken marinade.

For a light meal, add flaked chicken or ....

Toss and serve and wash the dish!
